Weekly Meal-venture Plans

SobeTober Week ONE Noms 

I'm going to break some recipe/leftover ideas into categories for you to pick and choose from in order to form your own meal plan. And to make life simpler, there is a shopping list included. As far as lunches go, overall I recommend using leftovers or making big salads with leftover protein from the night before (rotisserie chicken! leftover steak!)


The slow cooker and food prep will be your best friends this month.



Breakfast ideas
  • Egg Muffins from the Primal Palate
    • These guys are super, super simple and surprisingly reheat fabulously. Make a big batch and eat throughout the week. Mix up the veggies or meat in the recipe to your liking.
  • Leftover Mexican beef (from dinner recipes)
    • Reheat on stove or in microwave. Serve on a bed of spinach with a fried egg on top. UHMAZING. 
  • Pumpkin Breakfast pudding
    • Made with some oh so tasty seasonal pumpkin, and with the punch of protein filled gelatin and creamy coconut milk, this guy will keep you full all morning. 


Dinner
  • Garlic Beef Stew with Cauliflower Mash
    • Nothing is better than coming home to a warm and cozy house, with garlic and spices wafting through the air and to find that dinner is already ready. Yay for the slowcooker! 
  • Mexican Beef Lettuce Wraps
    • These things are amazingly tasty. Serve with some homemade salsas. Use the leftover meat mixture for breakfast or lunch. I like to double the recipe so there are leftovers!
  • Rotisserie chicken, roasted sweet potatoes, sauteed bacon and kale
    • Rotisserie chickens from New Seasons,  Costco, Safeway or Fred Meyer are great time and money savers. They taste fabulous hot and the left over chicken can be used for salads or stirfry
    • Sauteed bacon and kale is a staple side dish (or meal) at our house. If you are budget driven, pick up a pack of Bacon Ends and Pieces. Its in the meat department and its the same as bacon, just not in pretty strips. 
Easy snacks
  • Seasonal fruit: apples, pears, bananas, etc. 
  • Roasted mixed nuts (winco has a steal of a deal on these and remember peanuts are legumes... not nuts)
  • hard boiled eggs
  • chopped veggies (celery, peppers, baby carrots, jicama)
  • homemade guacomole

Shopping List

  • 1.5 – 2 lbs beef stew meat (safeway is an excellent place to find beef) 
  • 2 yellow onion 
  • 4-6 carrots
  • 4-6 stalks of celery diced
  • 4 heads garlic
  • 1 bunch of lancinato kale
  • 1 pound bacon
  • 1 lemon
  • 1 lb ground beef
  • 3 roma tomatoes
  • 4 bell pepper
  • 1 jalapeno
  • 1 small bunch cilantro
  • 1 head lettuce
  • 1 small 8oz can tomato paste
  • 1 can chicken broth
  • 1 can organic pumpkin 
  • 1 tbsp grass fed beef gelatin 
  • 1 can full-fat coconut milk 
  • 1 small head broccoli
  • 12-18 eggs
  • coconut oil to cook with
  • honey
  • cinnamon
  • cumin powder
  • nutmeg 
  • paprika
  • dried oregano
  • chili powder
  • ground marjoram
  • sea salt and black pepper to taste
  • Plus anything from the snack list
